The Hamacas coffee originates from Finca Tarrazas, a distinctive farm managed by Maria Vides in
La Libertad, Huehuetenango, Guatemala. Spanning 6 hectares, Finca Tarrazas consists of several
plots situated between 1,600 and 2,250 meters above sea level. This high-elevation farm is
characterized by its diverse biotic environment, including valleys, mountains, and waterfalls, which
create an ideal setting for cultivating exceptional Huehuetenango coffees. The primary variety
grown here is San Ramon, a local heirloom coffee tree unique to this region.
The coffee undergoes a meticulous fully washed process: ripe cherries are initially rested in nylon
sacks for 30 hours in the shade, then sorted and pulped. The beans are fermented in tanks for
15-30 hours, depending on weather conditions, washed, and finally dried on patios over 16 days.
During the drying process, the coffee is frequently turned to ensure even drying.
