Chiapas is, by volume, the largest producer in México as well as the one with most coffee with organic certification. The largest amount of cherry is grown by small-holder farmers that average below five hectares per capita. This Mexican southernmost state is brimming with rich and diverse culture, flora and fauna that encompass in every aspect the coffee crops.

Triunfo Verde is the name of an association of smallholder coffee producers who live in harmony with nature within the Reserva de la Biósfera Triunfo Verde. This natural reserve is divided into a buffer zone and a nucleus. The nucleus is a protected ecosystem that allows only endemic flora and fauna. Agricultural practices are permitted in the buffer zone as long as they have a symbiotic relationship with the environment. The association has over 440 active members who grow specialty coffee under native shade trees. Grown organically by smallholder farmers in the region of Chiapas (Mexico’s largest coffee-producing state), this coffee comes from members of CAFÉCO, a cooperative founded in 2016 to improve quality, combat rust, and support farmers through better prices. Nestled between 1,400 and 1,500 m.a.s.l. in the village of Santuario in La Concordia, in the region of Chiapas, their organically grown and diverse varieties of cherry are handpicked in the ripest state and generally fermented for 24 hours.

This lot is composed of Marsellesa, Peñasco, Oro Azteca, and Bourbon varieties. After a traditional 24-hour fermentation in parchment, the coffee is patio-dried for 7 to 8 days, ensuring clarity and balance in the cup.
